From time to time, I put down the shaker and pick up the sifter or the chef's knife. For Christmas I took a shot at the Hot Chocolate Cake from Fine Cooking magazine, complete with homemade marshmallows piled on top. Now if I could just find a way to use those leftover marshmallows in a cocktail...

Flavored foams to layer over drinks? Often this is done with sheet gelatin-containing liquids and nitrous chargers for whipped cream but would work for marshmallows too. I know that it will work for somewhat related Circus Peanuts (a bar here in Boston used them for a drink challenge).
