Pesto

This post is a milestone for the blog -- the first food recipe, as requested by one of my neighbors at a recent party.

Pesto

Combine in a food processor until smooth:

2 cups loosely packed fresh spinach leaves
1/2 cup loosely packed fresh basil leaves
1/2 cup walnuts
4 medium cloves garlic, peeled
1/2 cup shredded Parmesan cheese
1/8 teaspoon cayenne

Then, while food processor is running, pour in 1/2 cup extra virgin olive oil. Combine until well blended. Serve with pita chips or garlic crostini.

This recipe has all sorts of variations -- substitute additional basil for the spinach for more bite, substitute pine nuts for walnuts for a milder flavor, or omit the cheese for a thinner consistency.
